African Vegetarian Stew

Ingredients:
  • Small Kohlrabies; Peel & Cut In Chunks
  • Sweet Potatoes; Peel & Cut In Chunks
  • Large Onion; Chopped
  • Zucchini; Sliced Thick
  • Tomatoes; Or 16 Oz. Canned
  • Ounces Garbanzo Beans; Liquid Included
  • 1/2 Cups Couscous; Or Bulgar Wheat
  • 1/4 Cups Raisins; Dark Or Golden
  • Teaspoon Ground Coriander
  • 1/2 Teaspoons Ground Turmeric
  • 1/2 Teaspoons Ground Cinnamon
  • 1/2 Teaspoons Ground Ginger
  • 1/4 Teaspoons Ground Cumin
  • Cups Water

Directions:

Combine all the ingredients in a large saucepan. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes. Note: Serve the couscous separately, if desired.
