Apple Orchard Pancakes (makes 6, 3" pancakes)
Ingredients:
- 1/2 cup plain nonfat yogurt
- 1/2 cup skim milk
- 1 egg
- 1/2 tsp. vanilla
- 1 cup whole wheat flour
- 1 Tbl. sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 cup apples, chopped fine
- 1 Tbl. oil for cooking
Directions:
- In a large bowl, combine yogurt, milk, egg, and vanilla.
- In a separate bowl, combine dry ingredients.
- Mix dry ingredients into bowl containing liquid ingredients. Don't overmix.
- Fold in apple pieces.
- Pour 1/4 cup of batter onto a hot skillet coated with oil. When bubbles begin to burst on first side, flip and cook other side of pancake until golden brown. Serve warm.
Options:
- Top pancakes with fruit preserves, syrup, applesauce, or enjoy them plain
