(makes 6, 3" pancakes)

Nutrition Facts for Apple Orchard PancakesIngredients:

  • 1/2 cup plain nonfat yogurt
  • 1/2 cup skim milk
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 cup whole wheat flour
  • 1 Tbl. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1 cup apples, chopped fine
  • 1 Tbl. oil for cooking

Directions:

  1. In a large bowl, combine yogurt, milk, egg, and vanilla.
  2. In a separate bowl, combine dry ingredients.
  3. Mix dry ingredients into bowl containing liquid ingredients. Don't overmix.
  4. Fold in apple pieces.
  5. Pour 1/4 cup of batter onto a hot skillet coated with oil. When bubbles begin to burst on first side, flip and cook other side of pancake until golden brown. Serve warm.

Options:

  • Top pancakes with fruit preserves, syrup, applesauce, or enjoy them plain
