Caribbean Chicken & Rice (asopao De Pollo)
Ingredients:
- 1.00 Each Clove Garlic, Crushed
- 1.00 Tablespoon Capers
- 10.00 Oz Green Peas, Frozen
- 1.00 Medium Onion, Chopped
- 1.00 Medium Green Pepper, Chopped
- 16.00 Oz Tomatoes, Stewed, With
- 2.00 Teaspoon Salt
- 0.50 Teaspoon Ground Coriander
- 2.00 Cup Water
- 0.25 Teaspoon Pepper
- 1.00 Teaspoon Dried Oregano
- 0.00 Grated Parmesan Cheese
- 3.00 Lb Broiler Fryer Chicken, Cut
- 0.50 Cup Fully Cooked Smoked Ham,
- 1.00 Cup Rice, Regular, Uncooked
- 0.33 Cup Pitted Small Green Olives

Directions:
Place chicken in 12 inch skillet or Dutch oven. Sprinkle with salt,
oregano, coriander and pepper. Add water, tomatoes, onion and garlic.
Heat to boiling. Reduce heat. Cover and simmer 30 minutes. Stir rice
into liquid. Cover and simmer until thickest pieces of chicken are
done, about 20 minutes. Rinse frozen peas under running cold water to
separate. Drain. Add peas, green pepper, ham, olives, capers and 1
tablespoon caper liquid to chicken. Cover and simmer 5 minutes. Serve
