Caribbean Guisado

Ingredients:
  • Each Plum Tomatoes; Quartered
  • Cup Celery Root; Chopped
  • Cup Olive Oil
  • Tablespoon Black Pepper
  • Cup Fresh Cilantro;chopped
  • Cup Chickpeas; Cooked
  • Cup Pinto Beans; Cooked
  • Teaspoon Salt
  • Large Yellow Onions; Coarsely
  • Cup Pumpkin; Cubed
  • Cup Yucca; Peeled And Cubed
  • Tablespoon Ground Cumin
  • Teaspoon Hot Pepper Sauce
  • Each Whole Garlic Cloves
  • Medium Chayote Squash; Cut Into 2"
  • Cup Battata; Peeled And Cubed

Directions:

Preheat oven to 300 deg. Combine all ingredients in a large roasting pan or casserole dish. Place in oven and cook, uncovered, for 4 hours. The pumpkin, chayote and tomatoes will cook down to a thick sauce. Stir every 30 minutes. Add more stock if necessary. Serve hot.
