Basic Irish Sausages

Ingredients:
  • 1 1/2 Pounds Lean Pork
  • Ounces Pork Fat; Without Gristle
  • 1/2 Teaspoons Ground Allspice
  • Teaspoon Salt
  • Fresh-ground Pepper
  • Pinch Dried Sage Or Marjoram
  • Ounce White Breadcrumbs (opt)
  • Ground Ginger; Mace, Nutmeg, Cloves; Cayenne Pepper
