Japanese Pickled Cauliflower Coca-cola

Ingredients:
  • 6.00 Tablespoon Wine Vinegar Or
  • 0.50 Cup Celery, Very Thinly Sliced
  • 0.00 2-in Strips
  • 0.00 Drained
  • 0.25 Cup Sugar
  • 0.00 Water, Boiling
  • 0.75 Cup Coca-cola
  • 0.00 Cored, Seeded, And Cut Into
  • 0.00 Flowerets, Washed, And
  • 1.00 Each Green Bell Pepper, Washed,
  • 1.00 Medium Cauliflower, Separated Into
  • 1.50 Teaspoon Salt
  • 0.00 White Vinegar

Directions:

In a large bowl, combine the cauliflower flowerets and bell pepper strips. Cover with boiling water. Let stand for 2 minutes; drain thoroughly. Add the celery. In a small pan, heat the Coca-Cola, wine/white vinegar, sugar, and salt. Pour over vegetables. Toss lightly with a fork, and pack into 1-quart glass jars. Push down lightly so the liquid covers the vegetables. Cover and chill overnight. This keeps in the refrigerator for several days. Makes about 1 quart.
