Japanese Noodle Soup

Ingredients:
  • 1.00 Pkg Eden Shiitake Mushrooms
  • 1.00 Teaspoon Cayenne (optional)
  • 0.50 Cup Roasted Cashews, Chopped
  • 0.50 Pkg Eden Bifun Rice Pasta
  • 2.00 Each Cloves Garlic; Pressed
  • 2.00 Each Carrots
  • 7.00 Cup Water
  • 1.00 Medium Onion; Cut In Half Moons
  • 0.25 Cup Eden Organic Shoyu
  • 2.00 Tablespoon Eden Hot Pepper Sesame Oil
  • 1.00 Cup Pea Pods; Cut Off Ends
  • 1.00 Small Red Pepper; Chopped
  • 1.00 Each Celery Stalk; Chopped
  • 2.00 Tablespoon Grated Fresh Ginger
  • 1.00 Bunch Mustard Greens Or Kale
  • 2.00 Tablespoon Eden Brown Rice Vinegar
  • 2.00 Tablespoon Eden Mirin

Directions:

Heat oil, saute onions, carrots, celery. Slice shiitake mushrooms, discarding stems. Add shiitakes, soaking liquid and water to sauteed vegetables. Bring to a boil, simmer 15 minutes. Add pasta, cook according to package directions. Add ginger, pea pods, red pepper, greens, shoyu, vinegar and mirin. Turn heat down and allow vegetables to cook for 5 cashews.Vegetables should be bright and minutes. Serve garnished with chopped crunchy. The soup is best served immediately.
